Thanks goodness for the weekend. Last night I entertained a group of women and shared a few items on my menu. It was a hit. Only a few encouraging suggestions of improvement were given. Thanks Girls!!!
Today I didn't spend much time in the kitchen. My BFF came over and we played with our sewing machines. I embroidered a few things to make wall hangings for my kids and a flag for Halloween. They both turned out super cute!! I wonder what I could do with the machine for Tia Mia Dinners To Go?
Tomorrow I pick up my menus and update this site.....48 hours and we launch.........cheers!!!!!!

Test kitchen is in full swing
So today I tested 4 recipes for my menu and let me just say I'm glad I get to eat for free. The Chicken Pot Pie turned out so so at first. The crust was to fluffy. It soaked up all the gravy. After a few adjustments to the crust, #2 went into the oven. Oh My Word!! YUM! Next was my Chicken Enchiladas with sour cream sauce. I personally think the sauce needs more garlic, but over all I'm pretty happy with it. The Mac N Cheese came out as it should, perfect. And finally was the disaster of all disasters, the meat loaf. I cooked one last night for dinner and it took way to long. 1 hour and 45 minutes to be exact. How is that for convenience food. Not so much. So today I tried another path. Use less meat and smaller loaf pans, maybe that will make cooking time shorter. 2 pounds of meat later Im left with dry, tough tasteless meat. I think I'll skip meat loaf for now and just move on. Maybe I'll attempt it again after we launch.

Exciting time!
Summer vacation is coming to a close. Both of my children will be in school this year. Hannah is going into 3rd grade and Connor will be a Kindergartner! With all this free time on my hands what will I do with it? I could go back to work for someone...not on my top 10 list of things I want to do....I could go back to school myself. Eh, Maybe? I could pick up a new hobby. (That sounds much better than a job). Or I can go into business for myself.
After long talks with close friends and my hubby, I have decided to start a catering business. This isn’t just any catering business. I am catering to your family.
Quality family time is very important to me. I know how it is coming home from working all day, trying to cook a meal, clean the kitchen, make it to soccer practice on time, do homework, bed time and every other chore not listed. Who has time to cook a nice dinner that is healthy and homemade? This is where I come in. I make your dinner, freeze it, deliver it and now you have a meal that is ready whenever you are. All you have to do is bake. Sounds good right?
